  • 1 1/2 cups grated carrots
  • 1/2 cup vegetable oil
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 2 eggs
  • 1/2 cup chopped walnuts (optional)
  • 1/4 cup raisins (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a mixing bowl, combine the grated carrots, vegetable oil, eggs, and sugar. Mix well.

  3. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.

  4. Gradually add the dry ingredients to the carrot mixture, mixing until just combined.

  5. Stir in the chopped walnuts and raisins, if desired.

  6. Pour the batter into a greased 9-inch round cake pan.

  7. Bake for 40 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the cake to cool before serving.
